Zucchini Quiche


1 deep dish pie crust
2 medium zucchini
1 garlic clove, minced
2 Tbsp. cooking oil
3 eggs, beaten
1 c. whipped (or cream style) cottage cheese
¾ c. milk
½ c. shredded mozzarella
1 medium onion, diced


Pre-bake pie crust on pre-heated cookie sheet in 450 oven for six minutes. Remove crust and reduce temperature to 325. Saute zucchini, onion and garlic in hot oil until tender. Cool slightly. Spoon zucchini mixture into crust. In a bowl, combine cottage cheese, eggs and milk. Spoon over zucchini. Bake in a 325 oven on pre-heated cookie sheet for 45 minutes. Sprinkle mozzarella cheese on top and bake for five more minutes, or until knife inserted into center comes out clean.
