Ingredients

1 pound ground beef
½ c. sliced onions
14 oz. crushed tomatoes
½ c. ripe olives, coarsely chopped
6 oz. tomato paste
1 Tbs. chili powder
1 tsp. salt
½ c. chopped green pepper
1½ c. corn (frozen or canned)
1 small box Jiffy Corn Muffin Mix

Directions

Mix ground beef with the onions and shape into a large patty. Brown 5 minutes on each side, then break into chunks. Stir in tomatoes, paste, and seasonings (basically, everything else on the list except the muffin batter). Heat to boiling. Remove from heat. Prepare corn muffin mix according to package directions. Spread half of the batter in the bottom of a greased baking dish. Spoon in meat mixture. Drop remaining batter by spoonfuls on top. Bake at 375° for 35 minutes or until puffed and brown.
