Onward March: Start your spring right with these fun activities.

Better Breakfast
Waffle Day falls on March 25. Pay homage to the holiday with this recipe for Wild Rice Pecan Waffles from www.allrecipes.com.
Ingredients: 1 c. all-purpose fl our •1 tsp. baking powder •½ tsp. salt •2 eggs, separated •2/3 c. milk •¼ c. vegetable oil •1½ c. cooked wild rice •½ c. chopped pecans
Directions: In a bowl, combine the fl our, baking powder and salt. In a separate mixing bowl, beat egg yolks, milk and oil. Stir into dry ingredients just until moistened. In another bowl, beat egg whites until stiff peaks form and fold into batter. Add in the rice and pecans. Bake in a preheated greased waffl e iron until golden brown.

Perfect Pecans
Celebrate Pecan Day on March 25 with this recipe for Pecan Tarts from www.allrecipes.com.
Ingredients: ½ c. margarine •½ c. white sugar •2 egg yolks •1 tsp. almond extract •2 c. sifted all-purpose fl our •½ c. margarine •½ c. corn syrup •1 c. confectioners’ sugar •1 c. chopped pecans
Directions: Preheat oven to 400°F. In a large bowl, mix ½ cup margarine and ½ cup sugar. Stir in egg yolks, almond extract and sifted fl our. Spray tiny muffi n cups with nonstick spray. Press mixture evenly into muffi n cups and bake for 8-10 minutes. To make fi lling, bring to a boil the remaining margarine combined with the corn syrup and remaining confectioners’ sugar. Stir in chopped pecans. Spoon into tart shells no more than halfway. Top with pecan halves. Bake in oven for 5 minutes.
